Gajar ka Halwa, also known as carrot pudding, is a popular Indian dessert that is made with grated carrots, milk, sugar, ghee, and nuts. It is a rich and delicious dessert that is perfect for any occasion. In this recipe, I will guide you through the step-by-step process of making Gajar ka Halwa at home.

Ingredients:

1 kg of fresh carrots, peeled and grated
1 liter of full-fat milk
1 cup of sugar
1/2 cup of ghee (clarified butter)
1/4 cup of chopped cashews and almonds
1/4 cup of raisins
1 tsp of cardamom powder
Pinch of salt
Instructions:

Wash and peel the carrots. Grate them finely using a grater or food processor.

In a heavy-bottomed pan or kadhai, heat the ghee over medium heat. Once the ghee is hot, add the grated carrots and stir well. Cook the carrots for 15-20 minutes or until they become soft and start to release their juices. Keep stirring occasionally to prevent the carrots from sticking to the bottom of the pan.

Add the milk to the pan and stir well. Increase the heat to high and bring the mixture to a boil. Once it starts boiling, reduce the heat to low and let it simmer for 45-50 minutes or until the milk has been absorbed and the mixture has thickened.

Add the sugar, chopped nuts, raisins, cardamom powder, and a pinch of salt to the pan. Stir well and continue cooking on low heat for another 15-20 minutes or until the sugar has dissolved and the mixture has thickened further.

Once the halwa is ready, turn off the heat and let it cool for a few minutes. Serve the halwa warm or at room temperature garnished with some more chopped nuts.

Use fresh, juicy and sweet carrots for the best flavor and taste.
Grate the carrots finely for a smooth texture.
Use full-fat milk for a rich and creamy texture.
Adjust the sugar quantity to your liking. You can add more or less depending on how sweet you want your halwa to be.
