Ingredients:

2 cups long-grain rice
2 tablespoons vegetable oil or ghee
1 onion, sliced
1 teaspoon cumin seeds
1 cinnamon stick
3-4 cloves
2-3 cardamom pods
1 bay leaf
1 teaspoon salt
2 cups water
1 cup yogurt
1 teaspoon ginger paste
1 teaspoon garlic paste
1 teaspoon chili powder
1 teaspoon turmeric
1 teaspoon cumin powder
1 teaspoon coriander powder
1 cup mixed vegetables (carrots, peas, beans, etc.)
1 cup cooked meat (chicken, lamb, beef, or goat)
Fresh cilantro leaves, chopped
Lemon wedges, for serving
Instructions:

Rinse the rice thoroughly under cold water until the water runs clear. Soak the rice in cold water for 30 minutes.

Heat the vegetable oil or ghee in a large pot over medium heat. Add the sliced onions and fry until they are golden brown.

Add the cumin seeds, cinnamon stick, cloves, cardamom pods, and bay leaf to the pot. Fry the spices for a minute until they become fragrant.

Drain the rice and add it to the pot with the spices. Stir the rice gently to coat it with the oil and spices.

Add the water and salt to the pot and bring the mixture to a boil. Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the water has been absorbed.

While the rice is cooking, mix together the yogurt, ginger paste, garlic paste, chili powder, turmeric, cumin powder, and coriander powder in a bowl.

Heat a separate pot over medium heat and add the mixed vegetables. Fry the vegetables for a few minutes until they are slightly softened.

Add the cooked meat to the pot with the vegetables and fry for another minute.

Add the yogurt mixture to the pot with the meat and vegetables. Stir the mixture to combine everything together.

Once the rice is cooked, spread half of it on the bottom of a large serving dish. Spread the meat and vegetable mixture over the rice.

Add the remaining rice on top of the meat and vegetables, spreading it out evenly.

Garnish the biryani with fresh cilantro leaves and serve with lemon wedges on the side.

Tips:

To make the dish vegetarian, omit the meat and use only mixed vegetables.
You can add raisins, cashews, or fried onions to the biryani for added texture and flavor.
